Baja Rolls

Baja Rolls
This is one of our favorite summer appetizers. These rolls were inspired by Wahoo’s Fish Tacos.  Chopped Chicken, Cream Cheese and Spinach served on a hand rolled flour tortilla and served with a cilantro cream sauce or fresh salsa.  Goes great with fish tacos or any tasty summer spread.

Baja Rolls
Serves 4



  • 4 (12”) flour tortillas
  • 3 grilled chicken breasts (boneless/skinless, chopped)
  • 1/4 cup light cream cheese
  • 4 cups fresh spinach leaves
  • Salsa Fresca (Don’t have time for fresh salsa, substitute with store bought chunky salsa)


Combine all Salsa Fresca ingredients and let sit for 1 hour for flavors to combine.
Place 1 flour tortilla flat and spread with cream cheese. Layer generously with fresh spinach leaves. Place chopped chicken down the middle. Layer Salsa Fresca over chicken and spinach and roll tightly.

Cut into 4 pieces and serve with extra salsa or your favorite dipping sauce.
