Low Carb Avocado Deviled Eggs

Looking for a non-traditional  tasty low carb snack.

Avocado Deviled Eggs

 Makes 8

 

INGREDIENTS


§  4 hard boiled eggs

§  1 large avocado, peeled and pitted

§  1tbs spoon finely chopped onion

§  1tbs finely chopped cilantro

§  1 tbs plain Greek Yogurt or sour cream

§  3 lime wedges squeezed

§  Salt and pepper to taste

§  Pinch of paprika

 

INSTRUCTIONS


1.       Peel eggs and cut in half lengthwise

2.       Scoop out the yolks into a bowl and mash together with the avocado

3.       Mix in onion, cilantro,  salt and pepper and lime juice

4.       Scoop mixture back into the egg halves and garnish with paprika

 


Serving size 2 halves

Calories per serving 100; Net carbs 1;Fat 9 ; Protein 8g
