Bacon Brittle Candy

Bacon Brittle
Most everyone who knows me knows that I am a bacon addict.  I ran across this idea about a year ago, and decided to give it a try.  Yep, brittle is better with BACON!!! This is now a must have in our household and always a mouth watering experience upon mention ENJOY!

 Ingredients:

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 tablespoon unsalted butter
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • at least 1/2 cup chopped cooked bacon (add more for more smokiness)
(NOTE: Pat dry the bacon, greasy bacon isn’t good for this recipe)

 Directions:
  1. Grease or butter a large baking sheet or shallow pan.
  2. In a saucepan, combine the sugar, corn syrup and water over medium heat.
  3. Stir until the sugar dissolves and the syrup comes to a boil.
  4. Attach a candy thermometer to the pan, increase the heat to high, and cook, without stirring, until the mixture reaches 300 degrees.
  5. Immediately remove from the heat.
  6. Stir in the butter, vanilla, baking soda, and bacon bits.
  7. When the foam subsides, pour the hot mixture onto the prepared baking sheet as thinly as possible.
  8. Cool at least 10 minutes before breaking into pieces.
  9. If you have any leftovers (which you shouldn’t)  store in a covered container.
