White Chocolate Swirl Peanut Butter Cup |
Peanut Butter Cups are probably close to everyone’s
favorite candies. I found a recipe which is amazingly easy and tastes
great. I modified it just a bit to suit
my wife’s favorite, white chocolate.
Part One: Peanut Butter Filling
Ingredients:
- 1/2 cup creamy peanut butter
- 2 tablespoons unsalted butter, room temperature
- 1/8 teaspoon salt
- 1/2 cup powdered sugar
Directions:
Place the peanut butter, unsalted butter, and salt in a
microwaveable bowl, and heat in the microwave for about one minute or just
until soft, but not melted (check and stir the ingredients every 20 seconds).
Stir in the powdered sugar. Set aside
Part Two: Chocolate Cover
Ingredients:
- 9 ounces semi-sweet chocolate chips, coarsely chopped
- 9 ounces white chocolate chips, coarsely chopped
- 1 tablespoon shortening split in half for each chocolate
Directions:
Melt the chocolates and ½ tablespoon
shortening in each of the separate heatproof bowl placed over a saucepan of
simmering water. (See Double Bowler)
Part Three: Construction
Directions:
Drop a spoonful of the melted chocolate into
each of the paper lined miniature muffin cups. I used a silicone heart mold
that I found at Wal-Mart, you can pretty much use whatever you want. Top with a spoonful of peanut butter mixture.
Then top with another spoonful of melted chocolate. Refrigerate until set.
Store in an airtight container in the refrigerator or cool place.
This is a very versatile recipe, you can mix and match chocolate like I did or stick with one chocolate, so have fun with it and enjoy.
