This Southwestern Chicken Burger is inspired by my love for the cuisine and flavors of  New Mexico.  In the late summer and fall months the the Chile harvest is in full swing and the bold Southwestern flavors that come along with them.

This is one of our favorite summer appetizers. These rolls were inspired by Wahoo’s Fish Tacos.  Chopped Chicken, Cream Cheese and Spinach served on a hand rolled flour tortilla and served with a cilantro cream sauce or fresh salsa.  Goes great with fish tacos or any tasty summer spread.
