Authentic Avocado Salsa Verde

Avocado Salsa Verde

I grew up in Southern California, where street tacos were readily available.  This creamy avocado salsa verde is a wonderful change up from regular salsa. Its light, its flavorful, and has many uses.  We love it in tacos, burritos and eggs. This is an easy, fail-proof salsa that is sure to please.


Ingredients:

Salsa Verde, Green Sauce
Herdez Salsa Verde
1 ripe avocado, peeled and pitted
1 jalapeno, stemmed or roasted, chopped
3/4 cup Salsa Verde (I use Herdez)
1 tablespoon white vinegar
3/4 teaspoon salt
2 tablespoons minced fresh cilantro
2 tablespoons diced onion

Directions:

Combine avocado, jalapeno, salsa verde, vinegar and salt in blender. Puree on high add water to find your favorite consistency.

Pour into medium bowl. Add cilantro and onion; stir to blend. Cover and chill.

Yield: 1 1/2 cups
