Straight from the Garden |
This time of year (August) we typically find ourselves with an abundance of tomatoes and cucumbers. And nothing screams summer like this refreshing and healthy summer salad. This simple salad is new favorite of mine.
Cucumber and Tomato Salad
Serves 2
Ingredients
- 1 garden fresh large sized cucumbers or 3-4 mini cucumbers sliced and halved
- 3 garden fresh roma tomatoes sliced and halved
- 2 sprigs of green onion, finely diced
- 1 small bunch of cilantro or Italian parsley chopped
- 3-4 tbls Balsamic Vinegar
- 1 Clove Garlic finely chopped
- Salt and pepper to taste
- Queso Fresco(Farmers Cheese) or Feta Cheese
Directions
- Place the cucumbers in a bowl and add the tomatoes, green onion, and garlic.
- Toss the cucumber mixture with the Balsamic until evenly coated. Add cheese along salt and pepper to taste. Refrigerate for at least one hour before serving. The longer the better.
- Crumble additional cheese on top prior to serving.
